People, I made some South-German food today for dinner. It looks weird but tastes amazing – it’s called “Käsespätzle” (basically homemade pasta bake). Do you know the best thing? It’s pretty darn easy. Exactly my kind of food. Don’t get me wrong, I like to put in the work but if we’re honest the time you spent in the kitchen to cook should ideally be less than the time you spent enjoying the food with someone you like – because that’s the
best nicest part, isn’t it: eating delicious food for hours with your person. Anyhow let’s get to it so you can enjoy this yummy (not so healthy – just as a disclaimer) dish right away.
What you need:
– 500g flour
– 8 eggs
– 20g salt (about 3 tablespoons)
– 100ml water (or milk)
– 300g cream (“Schlagsahne”)
– one hand full of fresh parsley
– 1 onion
– 2 garlic gloves (optional)
– a lot of grated cheese (I used about 250g Emmentaler)
– dry roasted onions (optional)
For the dough just sieve the flour in a bowl, add the eggs, the salt and the water and stir it till it’s develops little bubbles. Make sure you don’t have any chunks in it. Then boil salt water.
Now comes the part where you’re making the actual “Spätzle”. Pros use special tools for this but for me it works best with a laminated cutting board and a pie server. So you put a big spoon portion on your cutting board (close to the edge) and then use the pie server to “cut” little worms and strip them off the board so they fall into your pot of boiling salt water. Oh woman, that was the weirdest description ever but I hope you got it?
Once they’re done they’ll come dancing up to the surface and you can collect them like little daisies (or something). Take them out (and put them in a bowl) and continue like this with the whole dough.
Now on to the sauce: chop the onion into little pieces, add garlic if you like to (we’re never cooking without it), fry till golden brown, then add the cream and the parsley. Let it cook for 5 minutes then add a handful of your grated cheese. Stir for another 2 minutes and season with pepper and if necessary with a bit of salt. Add your Spätzle to the sauce, stir so everything is covered in sauce and then add into a baking pan. Sprinkle the rest of the grated cheese on top – okay, sprinkle is probably not the thing I’m doing here, it’s more like throwing an extra layer of cheese on top of everything. Put in the oven and let it grill till the cheese is golden brown. Serve with some parsley (or dry roasted onions) and a side salad if you like. Super easy, right?
